Healthy zucchini pancake and zucchini omelette recipe

1 Zucchini/ Squash
1 small green onion
300 g flour
salt and black pepper as per taste
How to make zucchini pancake at home?
Step 1. Wash and peel of the squash. Add grated zucchini, eggs, green chopped onions, flour, sprinkle some salt and black pepper powder as per taste into a bowl. Let it stand for 15 minutes.
Step 2. Stir and mix everything to form batter like consistency. In a hot pan add a teaspoon of oil , scoop a spoonful of batter and spread into pie. Fry until golden brown and cook other side too.
The squash is rich in water. After seasoning with salt, it will leach water, which helps to make paste without adding any additional water.
Number of eggs used can be increased or decreased as according to your taste.
If you don’t eat flour then skip the flour and use rest of the ingredients as per suggested to modify this recipe into zucchini omelette.
